Apparently real men don’t eat quiche. Typical.

I feel like quiche is completely misunderstood by Americans. We assume that because it’s French (fun fact: it actually originated in Germany), it must be snooty, difficult to cook or not enough to fill you up. However, quiche is pretty delicious (it’s basically eggs and bacon in a pie), easy to make and is perfect for any meal of the day. Add a side salad for lunch or dinner, and you’re set to go!

In the name of making it OK for real men (and sassy girls) to make and eat quiche, I’m sharing my mom’s tried-and-true, secret family recipe. Whip this baby out when you need to impress people with a fancy-sounding dish–but you don’t have the time to pull out all the Julia Child stops.

Quiche Lorraine

What you need:
2 cups grated Swiss cheese (or combination of Swiss and cheddar cheese)
3-4 slices of crisp bacon, crumbled
1 pie crust (box mix–like Betty Crocker, frozen prepared, or create from scratch!)
3 eggs, beaten
1 cup whipping cream
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon powdered mustard
Dash of cayenne pepper
Dash of cinnamon
Optional: shredded carrots, diced onions, diced bell peppers

What to do:
Preheat oven to 425 degrees.

Prepare pie crust in quiche dish. Pie crust should be thick and shouldn’t come over the side of the dish.

In one bowl, combine beaten eggs, cream and milk. Stir.

In another bowl, combine grated cheese, crumbled bacon, salt, pepper, powdered mustard and cayenne powder. Stir. (If you’d like, you can also add shredded carrots, diced onions or diced bell peppers to this bowl. It’s a great way to add some color, a bit of texture and extra veggies to the dish!)

Pour the contents of this bowl evenly into the pie crust. Then pour eggs, cream and milk over the cheese mixture.

Make sure that the mixture is evenly spread throughout the dish. Add a dash of cinnamon to the top, and bake for 15 minutes at 425 degrees. Then reduce the temperature to 300 degrees and bake for an additional 30 minutes.
